Once you join the thieves guild, you can bribe guards to ignore crimes, and then pickpocket the gold from them, giving a large amount of XP to both speech AND pickpocketing. It doesn't remove the bounty, so guards will say "wait, I know you" and you can bribe them and steal it back.

Note that this only works 1 time per guard in a hold, if you talk to a guard after bribing them, the bribing option will not be there. You can do the same with NPC's that teach you things. Just learn something from them in a skill below level 50, then pickpocket it back. If it is above level 50, it costs between and gold per levelup. However, if you get the perk that lets you silently harm people with poisons through pickpocketing, you can place a paralysis poison and freely pickpocket any item with little to no chance of failing.

Finally, pickpocketing can be done without alerts even if you are not hidden. Hell, you can do it while the target you are pickpocketing is look straight at you, though you get a higher chance of taking the item if the target is not looking at you.
